Ingredients:

  • 1 (15 oz.) can no-salt-added or low sodium black beans, drained and rinsed
  • ½ cup unsweetened cocoa powder
  • ¼ tsp. salt
  • ¼ cup maple syrup
  • 4-8 drops of stevia
  • ½ avocado
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • ½ cup stevia sweetened chocolate chips
  • 2 tsp. sprinkles (optional)

Directions:

  1. Preheat oven to 350°F. Spray a mini muffin pan with non-stick spray. Set aside.
  2. Combine all ingredients except chips in food processor and puree until completely smooth. Transfer batter to bowl and fold in the chocolate chips.
  3. Scoop 1 Tbsp. of batter into the sections of a muffin tin or brownie pan. There should be 16 brownie bites total. Top with sprinkles if using.
  4. Cook for 15 minutes, then let cool completely before removing from pan. If they still are a bit soft, you can place them in the fridge overnight to firm up.
